    The caracolillo is a very special type of bean and appreciated in the world of coffee for its characteristics. The Baixa Mogiana region is characterized by having a high altitude – it has an average altitude of about 900 meters ranging from 800 to 1300 meters above sea level. The average temperature in the region is 20°, with abundant rainfall and very fertile soils ideal for agriculture, which provides optimal conditions for growing high-quality coffee. The terroir of the region, which includes factors such as soil and climate, also influences the characteristics of the coffee.

    Baixa Mogiana producers usually follow careful and environmentally friendly agricultural practices. The harvest is done by hand, which allows only the ripe beans to be selected and guarantees the quality of the coffee.

    So that you can understand why this type of grain is produced, we provide a brief explanation below:

    Inside a normal, flawless coffee cherry, you would expect to find two seeds. These seeds are extracted, processed and roasted for consumers to enjoy, they are the seeds of the coffee cherry, that is, the coffee "beans".

    Snail grains can represent 5% or 10% of a harvest. Its presence is the result of a natural mutation, or a defect within a coffee cherry, where an ovule fails to become pollinated.

    Thus, an additional space is generated for the only developing seed. Within this space a larger, rounded seed grows. This type of bean is called "caracolillo" and can be found in any variety of Arabica coffee from different origins.

    In the past, these beans were discarded as defective, but currently it has become one of the most appreciated coffees of each origin.

    Due to the shape of the bean, its toasting will be completely different. Due to its cylindrical shape, it slides more easily through the toaster, and this provides a more uniform toast.

    Since they are smaller beans, they also take less time in the roaster.

    The snail beans appear at the top of the coffee plants. By receiving fewer nutrients, its growth is lower and the flavor and aroma characteristics are concentrated.
